Spargel is the German word for asparagus -- which as you see here is normally white. How do they do that you wonder? DW-WORLD.DE has the answers for you. Spargel sports an eerie white color because it is grown underground. White asparagus has been called the Growing great spargel depends on a warm spring and harvesting spargel has come to depend on help from foreign, migrant workers. On many fields, Polish farm helpers do much of the back-breaking picking. During the spring months, this white side dish moves to the center of the plate. Traditional spargel recipes call for steaming the vegetable and serving it with melted butter, sliced ham or hollandaise sauce. Click on the link below the picture for a spargel soup recipe.
